The white 2021 Cutio Macabeo was produced with Macabeo grapes from three plots of 40-year-old head-pruned and dry-farmed vines on clay and limestone soils at 650 meters in altitude in the village of Almonacid de la Sierra. It had some skin contact, fermented in stainless steel with indigenous yeasts and matured with the lees, that were not stirred, in underground epoxy-lined concrete vats for 12 months. It's floral, with notes of pollen, chamomile, fennel and herbs, with a core of minerality that makes it very serious. It has freshness and balance and good ripeness.  It was bottled in January 2023.
